The starting point
Start with a continuous surface when the product needs full support or could pass through openings. Consider mesh when through-airflow is part of the process and the product can bridge the openings. Check the supporting tray too: an open mat on a closed tray does not create an open airflow path through the assembly.

“Solid” describes the surface, not necessarily the core
Here, a solid mat means a continuous working surface without through-openings. It may still contain fiberglass reinforcement. A mesh mat has openings through the working area. A woven pattern under a closed coating is not an open mesh.
Ask for a close-up and the actual opening dimensions. Names such as perforated, mesh and reinforced may be used differently across suppliers; confirm the finished structure.

For bakery trays: test the dough and base finish
Include dough consistency, portion size, spreading and the required base appearance in the decision. Mesh is worth trialing where an open surface serves the process. It is not a promise of a particular crust, baking time or energy saving.
Use the intended tray and recipe. Record sticking, underside marking, shape retention and handling after normal cooling. If dough presses into the openings, adjust the candidate structure or trial a continuous surface.

For dehydrator trays: match openings to the product
Record the smallest product dimensions at loading and after processing, together with softness and the tendency to stick or deform. A product that initially bridges a gap may sag or shrink during the cycle.
Evaluate mat, tray, shelf spacing and loading together. Compare retained product, cleanability and the process endpoint under the same conditions. Do not choose a larger opening solely because it looks more open.

A five-point sample checklist
- Photograph the tray and measure its usable inner area, corners and supports.
- Record opening dimensions, thickness and edge finish for each sample.
- Load representative product, including the smallest or softest pieces.
- Inspect retention, release, imprint, fit and handling after the cycle.
- Clean using the confirmed method and inspect both faces and mesh intersections.
